- 1 cup (267g) peanut butter
- 1 large egg
- 1 cup (200g) sugar
- 1 teaspoon baking soda
- ½ cup (100g) reese’s pieces
- 1 cup (136g) finely chopped reese’s peanut butter cups
Instructions
- Preheat your oven to 350°F and line two cookie sheets with Silpats or parchment paper.
- In a large bowl, combine peanut butter, egg, sugars, and baking soda. You can mix this by hand or use a mixer until well combined.
- Fold in the Reese’s Pieces and chopped peanut butter cups into the mixture.
- Scoop tablespoon-sized balls of dough onto the prepared cookie sheets, gently flattening each cookie with the tines of a fork.
- Bake for 8 minutes, then allow to cool for 15 minutes on the cookie sheets before transferring.
Notes
For a different texture, try using a mix of granulated and brown sugars.
Be careful when removing the cookies from the sheets as they can be crumbly.
Letting the cookies cool completely helps them firm up better.
