- 8 medium potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cooked bacon
- 1/4 cup green onions
Instructions
- Preheat your oven to 375°F (190°C).
- Scrub the potatoes and poke holes in them with a fork.
- Bake the potatoes for about 1 hour until tender.
- Let the potatoes cool, then cut them in half and scoop out the insides into a mixing bowl.
- Add sour cream, cheddar cheese, milk, butter, garlic powder, salt, and black pepper to the bowl and mash until smooth.
- Stir in the cooked bacon and green onions.
- Refill the potato skins with the mashed mixture.
- Place the stuffed potatoes back in the oven and bake for an additional 20 minutes, or until heated through.
