- 6 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature, 2 sticks)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F. Grease three 6-inch round cake pans and line the bottom with parchment paper.
- In a stand mixer, beat the eggs on medium-high speed while gradually adding sugar until the mixture reaches the ribbon stage.
- Sift the flour, baking powder, and cinnamon into the egg mixture and gently fold in with a spatula.
- Divide the batter among the pans and bake for 15-18 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Optional: Freeze the cake layers wrapped in plastic wrap for 4 hours for firmer layers.
- For frosting, beat cream cheese, mascarpone, and butter until smooth. Gradually add powdered sugar and then vanilla, mixing until fluffy.
- Brush cooled cake layers with espresso. Assemble by layering frosting between each cake layer, adding frosting to the top and sides.
- Decorate the top layer and sift cocoa powder on top.
- Cover loosely with plastic wrap and refrigerate for 4 hours before serving.
Notes
Ensure eggs are at room temperature for better mixing.
The sponge layers can be made ahead and frozen for convenience before assembly.
For a richer flavor, use strong coffee or espresso and chill the cake before serving.
