Description

Sugar Cookie Fruit Pizzas are a delightful treat featuring soft sugar cookies topped with creamy frosting and fresh fruit. Perfect for gatherings or a sweet snack, they combine rich flavors and a vibrant presentation. Easy to prepare and utterly delicious!


Ingredients

  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese, room temperature
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat the oven to 375°F and line two baking sheets with parchment paper.
  2. In a stand mixer, beat the salted butter and granulated sugar on medium-high until light and fluffy, about 3 minutes.
  3. Add in the egg, egg yolk, vanilla, and almond extract, mixing on low until smooth for about 30 seconds.
  4. Gradually mix in the baking soda, salt, and all-purpose flour until well combined.
  5. Using a ¼ cup cookie scoop, scoop large balls of dough onto the lined baking sheets, placing 6-7 balls on each sheet.
  6. Bake the cookies for 11-14 minutes until the edges are lightly golden and the tops have some crackling, avoiding over-baking.
  7. In a bowl, beat together the cream cheese and butter until smooth, then mix in the vanilla, pinch of salt, and powdered sugar until creamy.
  8. Spread the frosting on each cookie and top with diced fruit.

Notes

Make sure the butter is at room temperature for easier mixing.
Feel free to use a variety of fresh fruits for topping to add color and flavor.
Store any leftovers in an airtight container at room temperature.
