- 1 cup (227 g) salted butter
- 1½ cups (300 g) granulated sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons vanilla
- ½ teaspoon (0.5 teaspoon) almond extract
- 2¾ cups (380 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon (0.5 teaspoon) salt
- 4 ounces (113.4 g) cream cheese, room temperature
- 2 tablespoons salted butter
- 1 teaspoon vanilla
- pinch of salt
- 1¾ cup (210 g) powdered sugar
- fresh fruit for topping
Instructions
- Preheat the oven to 375°F and line two baking sheets with parchment paper.
- In a stand mixer, beat the salted butter and granulated sugar on medium-high until light and fluffy, about 3 minutes.
- Add in the egg, egg yolk, vanilla, and almond extract, mixing on low until smooth for about 30 seconds.
- Gradually mix in the baking soda, salt, and all-purpose flour until well combined.
- Using a ¼ cup cookie scoop, scoop large balls of dough onto the lined baking sheets, placing 6-7 balls on each sheet.
- Bake the cookies for 11-14 minutes until the edges are lightly golden and the tops have some crackling, avoiding over-baking.
- In a bowl, beat together the cream cheese and butter until smooth, then mix in the vanilla, pinch of salt, and powdered sugar until creamy.
- Spread the frosting on each cookie and top with diced fruit.
Notes
Make sure the butter is at room temperature for easier mixing.
Feel free to use a variety of fresh fruits for topping to add color and flavor.
Store any leftovers in an airtight container at room temperature.
