Description

These Strawberry Shortcake Cookies are bursting with flavor, featuring fresh strawberries and white chocolate chips. They are easy to make and perfect for any occasion, making them a delightful homemade treat!


Ingredients

  • 1 cup powdered sugar
  • 12 tbsp half & half
  • 2 1/2 cups all-purpose baking mix
  • 1/2 cup sugar
  • 1/2 cup half & half
  • 4 tbsp butter (melted)
  • 1 cup strawberries (chopped)
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, combine the baking mix and sugar, whisking until well blended.
  3. Add in 1/2 cup half & half and melted butter, mixing until a soft dough forms.
  4. Carefully fold in the chopped strawberries and white chocolate chips until evenly distributed.
  5. Scoop 1 1/2 tablespoons of dough onto the prepared cookie sheet, spacing them appropriately for spreading.
  6. Bake in the preheated oven for 8-10 minutes until lightly golden.
  7. Allow the cookies to cool on the warm baking sheet for 5 minutes before transferring them to a cooling rack.
  8. For the glaze, whisk together powdered sugar and 1-2 tablespoons of half & half until smooth.
  9. Drizzle the glaze over the cooled cookies and let it set.

Notes

For best results, use fresh strawberries for a vibrant flavor.
The cookies can be stored in an airtight container for up to 3 days.
