Description

These Strawberries and Cream Cookies pack an irresistible flavor punch, combining fresh strawberries and creamy white chocolate in a simple, delightful treat that’s perfect for any occasion!


Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 and 1/4 cups granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1/2 ounces freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a stand mixer bowl, combine butter and both sugars. Beat on medium speed until light and fluffy, about 3 minutes. Mix in vanilla extract.
  4. Reduce speed to medium-low and add eggs one at a time, mixing well after each addition.
  5. Lower the mixer speed to low and add the flour mixture, mixing just until combined. Stir in white chocolate chips and dried strawberries until evenly distributed.
  6. Using a large cookie scoop, portion out 3 tablespoons of dough, roll into a ball, and place on the baking sheet with the side showing the chocolate chips and strawberries facing up. Leave 2 inches between each cookie.
  7. Bake one sheet at a time for 12 to 13 minutes until edges are golden and centers are soft.
  8. Remove from oven, tuck in any edges that spread, and press extra white chocolate chips on top if desired. Allow cooling on wire racks for 20 minutes before serving.

Notes

Ensure the butter is at room temperature for better mixing.
Feel free to experiment with different types of chips or add nuts for extra flavor.
These cookies are best served fresh but can be stored in an airtight container for a few days.
