  • pounds chicken breasts
  • 1/4 cup avocado oil
  • 3 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 2 tablespoons light brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne powder
  • 1 chili in adobo sauce, seeds removed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lime

Instructions

  1. Trim excess fat or tendons from chicken breasts and place them in a freezer bag or between sheets of plastic wrap.
  2. Pound the chicken on the thickest parts using a meat tenderizer, rolling pin, or mason jar until flattened.
  3. In a small bowl, mix avocado oil, lime juice, garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce until well combined.
  4. Pour the marinade over the chicken, ensuring all sides are coated.
  5. Seal the bag or cover the bowl and refrigerate for at least 2 hours, up to 24 hours.

Notes

For best flavor, allow the chicken to marinate overnight.
Serve with a fresh lime wedge for added zest!
