- 4 large eggs
- 2 tablespoons milk or cream
- Salt & pepper to taste
- 2 ounces smoked salmon
- chopped chives for garnish
Instructions
- Melt the butter in a nonstick pan over medium heat.
- Whisk the eggs and milk (or cream) together in a bowl. Season lightly with salt and pepper. Add the egg mixture to the melted butter in the pan and gently scramble.
- Cook the eggs slowly and gently, stirring occasionally until soft curds form but the eggs are still slightly undercooked.
- Add the smoked salmon to the eggs and continue scrambling until the eggs are just set and remain moist.
- Sprinkle with chopped chives and serve immediately, either in the pan on a trivet or on two serving plates.
Notes
For creamier eggs, use heavy cream instead of milk.
Serve on toasted bagels or bread for added flavor and texture.
Feel free to substitute chives with dill for a different herbal note.
