- 2 tablespoons lemon zest ((from about 2 lemons))
- ¾ cup unsalted butter (softened)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 2 tablespoons lemon juice
- 2 large eggs
- 1 ¼ cup all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon kosher salt
- ¾ cup (113g) white chocolate (roughly chopped)
- 2 tablespoons lemon juice
- ¼ teaspoon lemon extract
- Pinch kosher salt
- 1 tablespoon lemon zest (for garnish)
Instructions
- Preheat the oven to 350℉. Grease and line an 8×8 inch pan with parchment paper.
- In a large bowl, mix the sugar and lemon zest by rubbing the zest into the sugar to enhance the lemon flavor.
- Add softened butter, lemon extract, and vanilla extract. Beat with a hand mixer until fluffy, about 1 minute.
- Incorporate lemon juice and eggs, mixing until combined and smooth.
- Add in the dry ingredients (flour, baking powder, and salt) and beat on low speed until just combined. Pour the batter into the prepared pan.
- Bake for 25 minutes, until the edges are golden and a toothpick comes out clean. Allow to cool for 15 minutes.
Notes
Using fresh lemon juice and zest will enhance the flavor of the brownies.
