Description

Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and spray a pie pan with non-stick spray.
  2. Pit, peel, and slice enough peaches to measure 5 cups and place them in a medium-sized bowl.
  3. Add sugar, cornstarch, vanilla, and lemon juice to the bowl of peaches, then stir until combined.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together the flour, brown sugar, and cinnamon. Then add the cold, cubed butter and pulse until crumbly. Gently mix in the rolled oats.
  6. Spread the oat crumble mixture over the peaches in the pan.
  7. Bake for 30-35 minutes, or until the top is golden brown.

Notes

For added flavor, feel free to sprinkle chopped nuts on top of the oat mixture before baking.
