Ingredients
Scale
- 3 medium zucchini
- 1 lb ground italian sausage
- ½ onion, chopped
- 2 garlic cloves, minced
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper, as needed
Instructions
- Preheat your oven to 375°F and prepare a large baking pan with foil or parchment paper.
- Halve the zucchini lengthwise and scoop out the flesh. Finely chop the removed flesh and set it aside.
- In a large skillet, cook the ground sausage over medium-high heat for about 3-4 minutes until browned.
- Add the chopped onion, minced garlic, and reserved zucchini flesh, cooking until the sausage is thoroughly cooked and the vegetables are tender, which will take another 3-4 minutes.
- Mix in the marinara sauce and combine well.
- Place the zucchini boats onto the prepared baking pan and season with salt and pepper. Fill each boat with the sausage mixture and sprinkle with mozzarella cheese on top.
- Bake for 15-20 minutes or until the cheese has melted and the sausages are bubbling. Test the zucchini's tenderness with a fork, adjusting the cooking time if necessary for thicker boats.
- Serve warm and store any leftovers in the fridge.
Notes
For a spicier flavor, use hot Italian sausage.
Feel free to mix in other vegetables like bell peppers or mushrooms for added texture and flavor.
These boats can be prepared ahead of time and baked right before serving.
