Description

Rotel Chicken Bake is a delightful dish featuring tender chicken, zesty tomatoes, and creamy cheese. This recipe provides a quick and satisfying meal, ideal for weeknight dinners or gatherings.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles, drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat the oven to 400˚F.
  2. In a bowl, mix together salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breast, then lay them flat in a large casserole dish.
  3. Drain the ROTEL tomatoes and spoon them over the chicken breasts, ensuring they're evenly covered. Top the chicken with shredded cheddar cheese.
  4. Cover the casserole dish with foil and bake for 25 minutes. After that, remove the foil and bake for an additional 5-10 minutes until the chicken is fully cooked (internal temperature of 165˚F).
  5. Garnish with freshly chopped cilantro or green onions before serving warm.

Notes

Feel free to adjust the spices to your taste for more heat.
This dish pairs well with rice or a fresh salad for a complete meal.
Leftovers can be stored in an airtight container for 3-4 days.
