Description

This roast sirloin with garlic potatoes is a mouthwatering dish featuring tender beef, savory herbs, and crispy potatoes—ideal for a comforting family meal!

Ingredients

Scale
  • 2 pounds beef sirloin
  • 1 pound baby potatoes
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix garlic, olive oil, salt, pepper, thyme, and rosemary together.
  • Rub the mixture all over the beef sirloin generously.
  • Place the beef in a roasting pan and arrange the baby potatoes around it.
  • Roast in the oven for approximately 1 hour, until a meat thermometer registers 135°F (57°C) for medium-rare meat.
  • Allow the beef to rest for 10 minutes before slicing it.
  • Serve alongside the roasted garlic potatoes.

Notes

For a more intense flavor, marinate the beef sirloin overnight with the garlic and herbs.
If you prefer well-done meat, extend the cooking time, checking periodically with a meat thermometer.
