- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work at a steady pace to ensure whipped egg whites and cream stay cool.
- Separate the eggs when cold, putting the whites in a large bowl and the yolks in a small bowl. Let the whites sit while you prepare other ingredients.
- Whisk the yolks until they are uniform in texture.
- Melt the chocolate and butter together in a microwave-proof bowl by breaking the chocolate into pieces. Microwave in 30-second intervals, stirring in between, until smooth. Let it cool slightly.
- Beat the cream until it forms stiff peaks, but be careful not to over-whip.
- Add sugar to the egg whites and beat until firm peaks form.
Notes
For best results, ensure that your equipment is clean and dry to achieve the right whip for the egg whites.
You can optionally add flavorings to the melted chocolate, such as vanilla or coffee, to enhance the taste.
