Description

These Red, White, and Blue Tortilla Cups are a delightful treat that combines crispy tortillas with light whipped cream and fresh berries. Perfect for a quick dessert or a fun summer snack!


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • 1 cup fresh berries like blueberries, raspberries, and strawberries
  • Optional: cocoa powder

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine the melted coconut oil and honey until mixed well.
  4. Brush each side of the tortilla quarters with the coconut oil mixture, then sprinkle with ground cinnamon.
  5. Arrange three tortilla triangles in a muffin pan to create a cup shape.
  6. Bake the tortilla cups for 15 minutes, then remove from the oven and allow to cool.
  7. In a mixing bowl, combine the whipping cream, natural sweetener, and vanilla extract; beat until soft peaks form.
  8. Fill each tortilla cup with whipped cream using a spoon or piping bag.
  9. Top with a variety of fresh berries.
  10. Sprinkle optional cocoa powder on top if desired.
