Ingredients
Scale
- 2 medium red onions
- 1 cup water
- 1 tsp salt
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp sugar (of choice)
- 1 cup white vinegar
Instructions
- Heat water in a saucepan on the stove, then turn off the heat just before it simmers, and set aside.
- Slice the onions thinly into rings or half-moons and transfer them to a large mason jar.
- In the warm water, add salt, optional red pepper flakes, sugar, and white vinegar. Stir well until dissolved.
- Pour the mixture over the onions in the jar, pressing them down gently with a spoon. Close the lid and refrigerate.
- Enjoy the pickled onions in about 30 minutes, though marinating overnight gives the best flavor.
Notes
Taste the onions after 30 minutes, but for the best flavor, let them sit overnight in the fridge.
Use a mandoline for extra thin slices if preferred.
