Description

These Pumpkin Waffles are a delightful way to enjoy breakfast with their irresistible flavor. Made with wholesome ingredients like pumpkin puree and spices, they are simple to prepare and perfect for sharing at any meal or special gathering.


Ingredients

  • 3 large eggs, separated
  • 2½ cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 2¾ cups milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat your waffle iron and spray it with nonstick cooking spray.
  2. Separate the eggs, placing the whites in a large glass or metal mixing bowl and setting the yolks aside. Beat the egg whites until stiff peaks form and set aside.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Whisk together and then make a well in the center.
  4. Add the reserved egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil to the well. Whisk until nearly smooth, leaving some lumps.
  5. Gently fold the beaten egg whites into the batter until no streaks remain; avoid overmixing.
  6. Pour the batter into the preheated waffle iron according to the manufacturer's instructions and cook until golden brown on both sides.
  7. Serve warm with butter, maple syrup, and your favorite toppings.

Notes

These waffles can be stored in the refrigerator for up to 3 days or frozen for longer shelf life.
For a richer flavor, add a dash of vanilla extract to the batter.
