  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 1 tablespoon instant espresso powder
  • 2 tablespoons hot water
  • 23 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, baking soda, salt, and spices in a medium bowl.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add eggs one at a time, then incorporate pumpkin puree and vanilla extract.
  5. Gradually mix the dry ingredients into the butter mixture, alternating with milk.
  6. Divide the batter among the cupcake liners, filling them about 2/3 full.
  7. Bake for 18-20 minutes until a toothpick comes out clean. Cool in the pan on a wire rack.
  8. Dissolve espresso powder in hot water; set aside to cool. In a large bowl, beat the softened butter until creamy.
  9. Gradually add powdered sugar, espresso, heavy cream, vanilla extract, and salt. Beat until smooth and fluffy, adjusting cream for desired consistency.
  10. Once cooled, frost the cupcakes with the coffee buttercream and add a sprinkle of cinnamon or decorative coffee bean if desired.
