Description

These Pumpkin Delight Cookies are a delightful treat featuring a pumpkin filling packed with flavor. The simple prep promises a homemade dessert that’s perfect for any occasion. Enjoy the delicious blend of spices and pumpkin in a cookie form that everyone will love!

Ingredients

Scale
  • 15 oz canned pure pumpkin
  • 1 1/2 cups sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter, melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking pumpkin purée, 1½ cups sugar, pumpkin pie spice, and cinnamon in a medium saucepan until combined.
  2. Stir cornstarch into apple juice in a small bowl until dissolved, then add this mixture to the saucepan. Cook over medium heat, stir until boiling, then reduce heat and simmer for 10 minutes. Let cool completely.
  3. In a large mixing bowl, mix melted butter and 1 cup of sugar with a hand mixer until thickened, then incorporate molasses and egg until smooth.
  4. Add baking soda, cinnamon, pumpkin pie spice, salt, and flour to the bowl, mixing until a soft dough forms. Adjust with extra flour as needed to prevent sticking.
  5. Chill the dough covered in the fridge for 30 minutes. Preheat the oven to 350°F. Roll the dough out to ¼ inch thick and cut out shapes using a cookie cutter, flattening them slightly.
  6. Make faces on half of the cookie cutouts by cutting out eyes and a mouth with a small knife.
  7. Spoon 1 tablespoon of cooled pumpkin filling onto each bottom cookie and place a face cookie on top, sealing them by pressing the edges.
  8. Place the cookies on a parchment-lined baking sheet and bake for 10–13 minutes, ensuring the center is cooked. Cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

Ensure the pumpkin filling is completely cool before using it to assemble the cookies for best results.
If the dough is too sticky after mixing, gradually add more flour until the desired consistency is achieved.
These cookies can be stored in an airtight container for up to a week.
