Description

Ingredients

  • 1/2 cup brown sugar
  • 3 3/4 cups flour
  • 1 tsp ground cinnamon
  • 1/2 cup cold butter, cubed
  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 2 cups white sugar
  • 1 cup canola oil
  • 4 eggs
  • 15 oz can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare two bread pans with non-stick spray and parchment paper for easy release.
  2. In a large mixing bowl, combine 3 3/4 cups of flour, salt, baking soda, ground cinnamon, ground nutmeg, ground cloves, and ground ginger.
  3. Stir in 2 cups of white sugar and 1/2 cup of brown sugar until well mixed.
  4. Pour in 1 cup of canola oil and stir until just combined. The mixture will appear crumbly.
  5. Add 2 eggs, mix, then add the remaining 2 eggs and stir until combined, still crumbly in texture.
  6. Incorporate 15 oz of pumpkin puree, 2/3 cup of water, and 1 tsp of vanilla extract, mixing until fully combined.
  7. Equally distribute the batter into the prepared bread pans.
  8. To prepare the crumb topping, mix together sugar, flour, and ground cinnamon. Cut in the cold butter until the mixture resembles crumbs.
  9. Sprinkle the crumb topping evenly over the batter in both pans.
  10. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the bread to cool before removing it from the pans.

Notes

Ensure your ingredients are at room temperature for better mixing.
You can use pumpkin pie spice as a substitute for the individual spices.
Keep leftover bread wrapped in foil to maintain moisture.
