  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk ricotta cheese
  • 3 large eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 3/4 cups chopped peaches, approximately 2-3 peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • 1/2 teaspoon pure vanilla extract
  • 1 to 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350 degrees F.
  2. To prepare the streusel topping, melt the butter in a medium saucepan over medium heat, stirring until browned, about 5-7 minutes. Allow it to cool before mixing with flour and sugar.
  3. In a large bowl, combine the remaining flour, sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk ricotta, eggs, and vanilla. Gradually integrate the melted butter.
  5. Combine the ricotta mixture with the dry ingredients, folding in the peaches gently without overmixing.
  6. Grease a 9-inch springform pan, add the batter, and top with the streusel mixture.
  7. Bake for 45 to 55 minutes, checking with a toothpick for doneness. Cool for 30 minutes in the pan before removing the sides.
  8. Prepare the honey glaze by whisking confectioners’ sugar, honey, vanilla, and milk to your desired consistency.
  9. Drizzle the glaze over the cooled cake before slicing and serving.
