This Peach Pie Filling features ripe peaches and warm spices, creating a sweet, flavorful blend perfect for pies and desserts. Easy to prepare, it adds a homemade touch to your favorite recipes.

- 4 ripe peaches, 1 lb peaches cubed
- 2/3 cup brown sugar, light brown sugar packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- Cube the peaches. If frozen, thaw them first. If fresh, peel the peaches first.
- In a medium saucepan over medium heat, combine peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Mix well.
- Heat the mixture until the peach juice separates and it comes to a simmer.
- Cook for 10 minutes, stirring occasionally until thickened. Lightly mash about 20% of the peaches using a potato masher. Cook for an additional minute, then remove from heat. Cool completely before using.
Notes
For a thicker filling, increase cornstarch by 1 tablespoon.
If desired, substitute half of the peaches with nectarines for a unique flavor.
This filling can be stored in the refrigerator for up to one week.
