- 1 cup unsalted butter, melted
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- 2½ cups all-purpose flour
- ¼ teaspoon salt
- 5 cups peaches, about 5–6 medium peaches, peeled and diced
- ⅓ cup light brown sugar
- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a 9 inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.
- In a large bowl, stir together the melted butter, sugar, and vanilla extract until combined.
- Add the flour and salt and mix until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan.
- Bake for 15 minutes, just until the edges begin to turn lightly golden.
Notes
For added texture, you can leave the peach skin on if desired.
Allow bars to cool before slicing for cleaner edges.
Store in an airtight container at room temperature for up to 3 days.
