- 1 cup quick cooking oats
- 1 tablespoon chia seeds
- 1 cup milk, any kind (unsweetened almond milk recommended)
- 1.5 teaspoons vanilla extract
- 2 tablespoons maple syrup (or honey)
- 1 cup chopped peaches (fresh or frozen)
- ½ cup rolled oats
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- ¼ teaspoon ground cinnamon
- Plain Greek yogurt
Instructions
- Preheat the oven to 375ºF and prepare the crumble topping by mixing oats, maple syrup, coconut oil, and cinnamon in a bowl until crumbly.
- Transfer the mixture to a small baking sheet and bake for 7-10 minutes until golden brown, tossing halfway through. Remove and set aside.
- In a small saucepan, combine all oatmeal ingredients and heat on medium/high.
- Bring to a boil, then reduce heat to low, stirring continuously for 3-5 minutes, until the oatmeal thickens.
- Serve the oatmeal topped with the crumble and a dollop of Greek yogurt.
Notes
Feel free to add more spices like nutmeg if you prefer a richer flavor.
This dish can be served warm or cold, making it a versatile breakfast option.
Use honey instead of maple syrup for a different sweetness.
