Description

Peach Cobbler Cookies combine sweet peaches and warm spices for a delightful treat. Perfect for any occasion, they are easy to prepare and simply irresistible!


Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch
  • 1 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed light brown sugar
  • 1/2 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp honey
  • 2 large eggs, room temperature
  • 2 tbsp unsalted butter, melted
  • 1/2 cup white granulated sugar
  • 2 tsp ground cinnamon
  • 4 peaches, 1 lb cubed
  • 2/3 cup brown sugar, light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. In a medium bowl, combine flour, baking soda, ground cinnamon, cornstarch, and salt; set aside.
  2. In a large bowl, beat room temperature butter, light brown sugar, and granulated sugar until pale and fluffy for about 2 minutes.
  3. Add eggs, vanilla extract, and honey to the mixture, mixing on medium speed until well blended; gradually mix in the dry ingredients on low speed until just combined.
  4. Preheat oven to 350℉ and line two cookie sheets with parchment paper. Let cookie dough rest for 10 minutes to reduce spreading.
  5. Using a large cookie scoop, place 6 dough balls per cookie sheet.
  6. Bake for 12-14 minutes, until the edges are golden, then press the center of each cookie with a teaspoon to create a slight indent.
  7. Allow the cookies to cool completely on the cookie sheet.

Notes

Allowing the dough to rest helps prevent spreading during baking.
Experiment with adding nuts for extra texture.
Store cookies in an airtight container for freshness.
