Ingredients
Scale
- 1 9" graham cracker crust
- 8 oz. cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 21 oz. cherry pie filling
Instructions
- If using a store-bought graham cracker crust, skip to step 2. For homemade, prepare the crust in a 9" pie pan.
- In a medium bowl, combine cream cheese, powdered sugar, and vanilla extract. Whip until smooth using a hand mixer or stand mixer and set aside.
- In a large bowl, whip heavy cream on low speed, gradually increasing until stiff peaks form, about 5 minutes.
- Fold the whipped cream into the cream cheese mixture gently with a rubber spatula until combined.
- Pour the mixture into the prepared pie crust, smoothing the top. Refrigerate for at least 4 hours or overnight to set.
- Once set, top with cherry pie filling, slice, and serve.
Notes
For a firmer cheesecake, refrigerate overnight.
Consider adding fresh cherries for a garnish before serving.
Ensure the cream cheese is well softened for smooth mixing.
