Ingredients
Scale
- 1/2 cup high-protein plant-based yogurt or skyr, 135g
- 2 tsp orange zest
- 1/2 cup freshly squeezed orange juice (about 1–2 navel oranges)
- juice of 1 lime or 2 tbsp extra orange juice
- 2 tbsp agave syrup
- 1 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
- 3/4 cup non-dairy evaporated milk
- 1/3 cup chia seeds, 57g
- 3 tbsp rolled oats, 16g
- 2–3 pitted medjool dates, 40g
- 2 tbsp coconut flakes, 8g
- 2 tbsp raw cashews, 16g
- 1 tsp orange zest
- 1/2 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
Instructions
- Blend yogurt, orange zest, orange juice, and lime in a blender until smooth. Add agave, vanilla, and salt; blend again while incorporating evaporated milk. Taste and adjust sweetness or salt as needed.
- Mix in chia seeds thoroughly. Cover and refrigerate for 10 minutes to allow seeds to bloom. Stir again to break clumps, cover, and refrigerate overnight to gel.
- Pulse oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt in a food processor until crumbly. Store in the fridge until serving.
- Portion chia seed mixture into bowls or jars and top with the crumble mixture before serving.
Notes
Use fresh orange juice for a vibrant flavor.
Allow chia pudding to set overnight for the best texture.
Adjust sweetness to your preference with more agave syrup if desired.
