Description

This Mixed Berry Crisp offers an irresistible blend of strawberries and blueberries topped with a crunchy oat crumble. It’s straightforward to prepare, making it a delightful dessert for gatherings or a cozy treat at home.


Ingredients

  • ¾ cup (93g) all purpose flour
  • ¾ cup (64g) quick cook oats
  • ¾ cup (150g) packed brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons (78g) cold unsalted butter, diced
  • ¼ teaspoon salt
  • 1 pound strawberries, hulled and sliced
  • 2 cups blueberries, frozen or fresh
  • ½ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons (24g) cornstarch

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine flour, brown sugar, oats, cinnamon, and salt to make the crumble. Use a pastry cutter to incorporate the butter until small crumbs form. Set aside.
  3. In another bowl, mix the strawberries and blueberries, gently tossing them with sugar, lemon juice, and cornstarch. Spread this mixture in the bottom of an 8-inch square pan.
  4. Evenly distribute the crumble topping over the berry mixture and press down slightly to compact it.
  5. Bake for 30-33 minutes, or until the topping is browned and crunchy. Serve warm or at room temperature, ideally with whipped cream or ice cream.

Notes

For a gluten-free option, use a gluten-free flour blend.
Ensure the crisp cools slightly before serving to allow the filling to thicken.
You can mix in other berries like raspberries or blackberries for variation.
