- 1 deep dish pie shell (16 oz)
- 1 cup diced chicken
- 2 cups fresh spinach
- ¼ cup sun dried tomatoes, diced
- 2 green onions, thinly sliced
- ½ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 6 large eggs
- ½ cup heavy cream
- ½ cup milk
- ¼ tsp salt
- ¼ tsp ground black pepper
Instructions
- Preheat the oven to 400˚F. Prepare the pie crust by lining it with parchment and filling it with dried beans. Bake for 12-15 minutes until golden brown. Let it cool to room temperature and reduce the oven temperature to 350˚F.
- In a medium bowl, combine eggs, heavy cream, milk, salt, and pepper. Beat until fully combined to make the custard.
- Chop the spinach and place it at the bottom of the pie crust. Layer with chicken, sun dried tomatoes, green onions, and cheeses.
- Pour the egg mixture over the ingredients in the quiche. Set the quiche on a baking sheet and bake for 45-55 minutes, until the center is just set.
- Let the quiche sit for 20 minutes before serving warm or at room temperature.
Notes
Make sure not to poke holes in the crust to prevent leaking.
You can swap out the fresh spinach for kale or other leafy greens as you like.
This quiche can be made ahead of time and reheated for an easy meal.
