- 1 pound grape or cherry tomatoes, halved
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 to 2 cloves garlic, grated
- 1 tablespoon finely chopped basil
- 1/2 tablespoon finely chopped fresh parsley
- 1 teaspoon finely chopped fresh thyme
- dash of crushed red pepper flakes
- kosher salt, to taste
Instructions
- In a medium bowl, combine the halved tomatoes, olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, red pepper flakes, and kosher salt. Stir until everything is well mixed.
- Cover the bowl tightly with plastic wrap and let it sit at room temperature for at least 30 minutes to enhance the flavors. For best results, allow the mixture to marinate for 1 to 2 hours. Stir the tomatoes occasionally during this time. If marinating longer than 2 hours, refrigerate the bowl to keep the mixture fresh.

Allowing the tomatoes to marinate longer enhances their flavor.
Experiment with different herbs based on your preference, such as oregano or chives.
