Description

These lemon poppy seed scones are bursting with flavor and are incredibly easy to make. Perfect for a cozy breakfast or tea time, they feature zesty lemon, crunchy poppy seeds, and a delightful glaze, making them a must-try for any homemade recipe lover!


Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 3 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 6 tablespoons cold butter, cubed
  • 2 large eggs, lightly beaten
  • ⅓ cup plain greek yogurt
  • 3 teaspoons vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 1 cup powdered sugar
  • 3 tablespoons butter, melted
  • 23 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine flour, sugar, poppy seeds, baking powder, and salt, whisking until well blended.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse sand.
  4. In another bowl, mix together the eggs, Greek yogurt, vanilla extract, and almond extract.
  5. Add the wet ingredients to the dry ingredients, stirring gently until just combined.
  6. Transfer the dough to a floured surface, forming it into a 12-inch circle, and cut it into six wedges.
  7. Gather the scraps, pat them into another circle, and cut into six additional wedges.
  8. Arrange the scones on a baking sheet and bake for 15–17 minutes, or until golden brown.
  9. While baking, whisk together the powdered sugar, melted butter, and lemon juice until smooth and well combined.
  10. Once the scones are baked, brush them with melted butter and drizzle the glaze on top.
  11. Optionally, sprinkle additional poppy seeds over the glaze before serving.

Notes

Best when served fresh, but can be stored in an airtight container for up to 3 days.
For an extra zing, add more lemon juice to the glaze if desired.
These scones can be frozen before baking; just add a few extra minutes to the baking time.
