- 2 lbs boneless skinless chicken thighs
- ¼ cup tequila blanco
- ¼ cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon dried cilantro
- 1 tablespoon packed dark brown sugar
- 1 tablespoon garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon tomato powder
- ½ teaspoon chipotle powder
- kosher salt & fresh ground black pepper, to taste
- fresh sliced lime, chopped cilantro – for garnishes, optional
Instructions
- Place the chicken thighs in a resealable plastic bag or large bowl.
- Add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder, chipotle powder, and salt/pepper. Mix well by massaging the chicken.
- Seal the bag or cover the bowl, and refrigerate for at least 2 hours or overnight.
- Before grilling, let the marinated chicken sit at room temperature for 30 minutes.
- Preheat the grill to medium-high heat (375-450°F) and grease the grates.
- Grill the chicken for 4-5 minutes per side or until it reaches an internal temperature of 165°F.
- Remove the chicken from the grill and let it rest for at least 10 minutes before serving.
- Optionally, garnish with lime wedges and cilantro before serving.
Notes
The longer you marinate, the more flavorful the chicken will be.
Ensure the chicken is at room temperature before grilling for even cooking.
You can use an indoor grill pan if outdoor grilling is not possible.
