- 2 pounds chicken breast
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup bbq sauce
- 1/4 cup honey
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, (canned or frozen)
- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 cup ranch dressing
Instructions
- Cook the rice according to package instructions.
- In a large skillet, heat olive oil over medium heat. Season chicken breast with salt, pepper, paprika, and garlic powder.
- Add chicken to the skillet and cook until browned and cooked through, about 6-7 minutes per side.
- In a bowl, mix together BBQ sauce and honey, then pour over the cooked chicken. Stir to coat well.
- Remove chicken from heat and let it rest for a few minutes before slicing.
- To assemble, place cooked rice in bowls, top with sliced chicken, black beans, corn, lettuce, cheddar cheese, pickled onions, and cilantro.
- Drizzle ranch dressing over the top before serving.
Notes
For extra flavor, marinate the chicken in BBQ sauce for an hour before cooking.
