Description

These Healthy Applesauce Muffins are packed with flavor and made with wholesome ingredients, making them a perfect quick breakfast or snack for any time of the day.


Ingredients

  • 1 ½ cups oat flour
  • 1 cup rolled oats, plus more for topping
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil or avocado oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with paper liners or grease the cups.
  2. In a medium bowl, mix oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt together until combined.
  3. In a large bowl, whisk eggs, applesauce, maple syrup, almond milk, vanilla, and oil until smooth and well blended.
  4. Combine the dry ingredients with the wet mixture, stirring until just mixed. Avoid overmixing the batter.
  5. Evenly distribute the batter in the muffin cups and sprinkle with extra rolled oats on top.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then move them to a wire rack to cool completely.

Notes

For added flavor, consider adding nuts or dried fruit to the batter.
These muffins can be stored in an airtight container for up to a week.
