- 1 cup rolled oats, plus more for topping

- 2 large eggs
- 1 cup unsweetened applesauce
- ½ cup almond milk
- ½ cup maple syrup
- 2 tablespoons melted coconut oil or avocado oil
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 350°F and prepare a muffin tin with paper liners or grease the cups.
- In a medium bowl, mix oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt together until combined.
- In a large bowl, whisk eggs, applesauce, maple syrup, almond milk, vanilla, and oil until smooth and well blended.
- Combine the dry ingredients with the wet mixture, stirring until just mixed. Avoid overmixing the batter.
- Evenly distribute the batter in the muffin cups and sprinkle with extra rolled oats on top.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then move them to a wire rack to cool completely.
Notes
For added flavor, consider adding nuts or dried fruit to the batter.
