Instructions
- Preheat your oven to 425°F and line 6 wells of a standard 12-cup muffin tin with paper liners, spacing them out for room to expand.
- In a large bowl, whisk the flour, baking powder, salt, cinnamon, and nutmeg until no streaks of baking powder remain.
- Add 1.5 cups of diced Granny Smith apple to the dry mix and toss until coated.
- In a separate bowl, whisk avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until no streaks of flour remain.
- Divide the batter among the 6 muffin liners, filling each to the top.
- Mix topping brown sugar and cinnamon, and sprinkle over the muffin batter, adding the reserved apple on top.
- Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for 13-18 minutes, testing doneness with a toothpick.
- Let cool briefly before transferring to a wire rack. Repeat with remaining batter.
- Optional: Drizzle cooled muffins with a mixture of powdered sugar and milk for added sweetness.
