Ingredients
Scale
- ½ cup pineapple juice, canned, room temperature
- ½ cup whole milk, warmed to 100-110°f
- 5 Tablespoons unsalted butter, melted
- 6 Tablespoons granulated sugar
- 2 Tablespoons light brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 ¼ teaspoons instant yeast
- ¼ cup all-purpose flour
- 3 ¾ – 4 cups bread flour
- 1 ½ teaspoons fine sea salt
- 1 egg, lightly beaten with 2 tablespoons water
- 1 tablespoon butter, melted
Instructions
- In a large mixing bowl or stand mixer, blend pineapple juice, warm milk, melted butter, granulated sugar, brown sugar, eggs, vanilla, and yeast until mixed well.
- Incorporate all-purpose flour and 3 cups of bread flour; stir to form a rough dough. Add salt and mix, then gradually work in remaining bread flour until the dough is slightly sticky.
- Knead dough for 4-5 minutes with a mixer or 8-10 minutes by hand until smooth and elastic.
- Grease a large bowl, place dough inside, and cover. Let it rise in a warm spot for about 1 ½ hours, or until doubled in size.
- Punch down the dough and divide into 15 equal pieces, shaping each into a smooth ball.
- Arrange dough balls in a greased 9×13-inch pan, spacing them slightly. Brush tops with eggwash, cover, and let rise for 1 hour until puffy.
- Preheat oven to 375°F (190°C) and bake rolls for 18-20 minutes until tops are golden brown.
- Brush baked rolls with melted butter and let cool slightly before serving.
