Description

Ground Chicken Lettuce Wraps are full of flavor and easy to make, perfect for a quick dinner or healthy meal. Featuring ground chicken, veggies, and tasty sauces, they’re a delightful option for any occasion!


Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 2 teaspoons fresh grated ginger
  • 4 cloves garlic minced
  • 2 lb ground chicken
  • 1 small yellow onion finely diced
  • 2 cups shredded carrots
  • 1 (8-oz) can water chestnuts drained and diced
  • butter lettuce for serving
  • for toppings: sliced green onions, crushed peanuts, avocado, and/or fresh cilantro
  • 1/2 cup coconut aminos or low-sodium soy sauce
  • 2 tablespoons hoisin sauce optional
  • 1 tablespoon honey
  • 2 tablespoons peanut butter or cashew butter
  • 2 tablespoon rice wine vinegar
  • 1 tablespoon water
  • 1 tablespoon cornstarch

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ginger and garlic; sauté until fragrant.
  3. Stir in ground chicken and cook until browned.
  4. Add yellow onion, carrots, and water chestnuts; stir well and cook until vegetables are tender.
  5. In a bowl, combine coconut aminos, hoisin sauce, honey, peanut butter, rice wine vinegar, water, and cornstarch; mix well.
  6. Pour the sauce mixture into the skillet; stir and cook until thickened.
  7. Remove from heat and let cool slightly.
  8. Serve the chicken mixture in lettuce leaves with toppings.

Notes

You can substitute ground turkey for a different flavor.
Customize toppings based on your preference to add more crunch or flavor.
For a spicier option, include chili flakes or sriracha in the mixture.
