- 1 tablespoon olive oil or avocado oil
- 2 teaspoons fresh grated ginger
- 4 cloves garlic minced
- 2 lb ground chicken
- 1 small yellow onion finely diced
- 2 cups shredded carrots
- 1 (8-oz) can water chestnuts drained and diced
- butter lettuce for serving
- for toppings: sliced green onions, crushed peanuts, avocado, and/or fresh cilantro
- 1/2 cup coconut aminos or low-sodium soy sauce
- 2 tablespoons hoisin sauce optional
- 1 tablespoon honey
- 2 tablespoons peanut butter or cashew butter
- 2 tablespoon rice wine vinegar
- 1 tablespoon water
- 1 tablespoon cornstarch
Instructions
- Heat olive oil in a skillet over medium heat.
- Add ginger and garlic; sauté until fragrant.
- Stir in ground chicken and cook until browned.
- Add yellow onion, carrots, and water chestnuts; stir well and cook until vegetables are tender.
- In a bowl, combine coconut aminos, hoisin sauce, honey, peanut butter, rice wine vinegar, water, and cornstarch; mix well.
- Pour the sauce mixture into the skillet; stir and cook until thickened.
- Remove from heat and let cool slightly.
- Serve the chicken mixture in lettuce leaves with toppings.
Notes
You can substitute ground turkey for a different flavor.
Customize toppings based on your preference to add more crunch or flavor.
For a spicier option, include chili flakes or sriracha in the mixture.
