- 1 pound lean ground beef
- 1/3 cup diced shallot
- 2 cloves garlic grated or minced
- 1 teaspoon italian seasoning
- 2 small zucchini diced
- 1 cup corn frozen or fresh
- 1/3 cup basil pesto
- 1 tablespoon balsamic vinegar
- Chopped basil for garnish
Instructions
- Heat a 12 inch skillet over medium-high heat with a little olive oil and add the ground beef. Cook for 2-3 minutes, crumbling the beef as it cooks.
- Add in the shallots and garlic, seasoning with salt, pepper, and italian seasoning. Cook for 1 minute until shallots soften and garlic is fragrant.
- Push the beef mixture to one side of the skillet and add zucchini and corn. Season with a bit of salt and pepper.
- Cook until beef is fully cooked and zucchini is tender. Mix in basil pesto and balsamic vinegar, stirring everything together.
- Taste and adjust seasoning if necessary, then top with chopped basil and serve immediately.
Notes
Feel free to substitute ground turkey for a leaner option.
You can add more vegetables like bell peppers or spinach for extra nutrition.
