Description

This Grinder Pasta Salad brings together fresh veggies, savory meats, and a creamy dressing for a delightful dish that’s quick to prepare and perfect for gatherings. Enjoy a flavorful and hearty meal that everyone will love!


Ingredients

Scale
  • 12 oz short pasta (rotini, fusilli, etc.)
  • 45 oz shredded iceberg lettuce
  • ½ red onion (very thin sliced)
  • 1 ½ cups grape tomatoes (quartered)
  • 1 cup banana peppers (chopped)
  • 4 oz salami (chopped)
  • 4 oz turkey pepperoni (chopped)
  • 34 oz oven roasted deli turkey (chopped)
  • 8 slices provolone cheese (chopped)
  • 1 cup mayonnaise
  • 34 Tbsp red wine vinegar
  • 12 Tbsp banana pepper juice
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 ½ tsp Italian seasoning
  • ½ tsp cracked pepper
  • ½ tsp sea salt (more or less to taste)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water to prevent softening.
  2. Chop the vegetables, meats, and provolone cheese. In a large bowl, combine all salad ingredients.
  3. In a separate bowl, whisk together the dressing ingredients, adjusting seasoning and thickness as needed.
  4. Pour ¾ of the dressing over the salad mixture and toss to combine. Chill until ready to serve, then add the remaining dressing just before serving.

Notes

Feel free to customize with your favorite deli meats or vegetables.
This salad can be made a day ahead; just keep it refrigerated!
