Description

These Grilled Greek Chicken Kabobs are bursting with flavor thanks to marinated chicken and fresh veggies, making them a delightful option for a healthy meal or a quick dinner!


Ingredients

  • 2 lbs boneless & skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 large garlic cloves, minced
  • ¼ cup extra virgin olive oil
  • ½ tablespoon dijon mustard
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh dill, or ½ teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1 medium red onion, cut into large chunks
  • 2 large zucchini, 1 green and 1 yellow, sliced into ½ to 1-inch half moons
  • 1012 skewers, if using wooden skewers, soak them in water for 30 minutes

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, and Dijon mustard. Add the chicken, dill, oregano, salt, and pepper, and toss to coat. Cover and marinate for at least 30 minutes in the refrigerator.
  2. Thread zucchini, onion, and marinated chicken onto the skewers, alternating until full.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked, reaching an internal temperature of 165°F.
  5. Remove from the grill, serve on a platter topped with fresh dill, and enjoy with tzatziki and lemon wedges.

Notes

Marinate the chicken overnight for even more flavor.
Ensure the grill is hot enough to achieve grill marks without drying out the chicken.
Use a meat thermometer to check that chicken is cooked through.
