Description

Experience the mouthwatering taste of Grilled Corn Elote Style! This dish features fresh corn grilled to perfection and topped with a creamy mixture that includes mayonnaise, sour cream, and zesty lime juice. Ideal for summer gatherings or a quick, flavorful side dish.


Ingredients

  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks from the ears of corn while leaving the core attached.
  2. Preheat a grill or cast iron pan and grill the corn, turning occasionally, until slightly charred on all sides.
  3. In a small bowl, combine mayonnaise, sour cream, and chopped cilantro to create a dressing.
  4. Once grilled, take the corn off the heat and coat it generously with the mayonnaise mixture using a basting brush.
  5. Squeeze lime juice over the corn, and top with parmesan and cotija cheese. Finish with a sprinkle of chili powder and serve!

Notes

For a spicier kick, add more chili powder to taste.
Cotija cheese can be substituted with feta if unavailable.
Serve hot for the best flavor.
