Description

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • Hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing all its ingredients in a bowl. Cover and set aside.
  2. Dry the chicken with paper towels and preheat the grill to medium-high. Rub the chicken with high-heat oil and season with garlic powder, paprika, salt, and optional pepper.
  3. Grill the chicken for 4-7 minutes per side until the internal temperature is 165°F (74°C). Let it rest before assembling the sandwich.
  4. Slice the brioche buns and lightly toast them on the grill while the chicken rests.
  5. Spread garlic aioli on the bottom half of each toasted bun and add a grilled chicken breast on top.
  6. Layer avocado slices, tomato slices, lettuce leaves, and crispy bacon on each sandwich. Add dill pickle slices if desired.
  7. Drizzle hot honey over the top to taste, adjusting for spice preference.
  8. Place the top bun on each sandwich and serve warm for the best flavor.

Notes

For extra flavor, marinate the chicken in the seasoning for 30 minutes before grilling.
