- 1 tablespoon light brown sugar, packed
- 1 ½ teaspoons kosher salt
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoon onion powder
- 1 ½ teaspoon smoked paprika
- 1 teaspoon freshly ground black pepper
- chili powder or cayenne pepper, optional and to taste for spiciness
- 4 pounds chicken legs
- 1 cup BBQ sauce
- ¼ cup apricot jam
Instructions
- In a small bowl, combine all seasonings and spices to create the dry rub.
- Pat the chicken dry with paper towels. Rub the dry rub evenly over the drumsticks. Cover and refrigerate for 1-2 hours, or overnight.
- In a saucepan, combine BBQ sauce and jam. Heat over medium-low until simmering, and let it thicken for about 10 minutes, whisking occasionally. Set aside.
- Preheat the grill with half on high and half on medium heat. Lightly oil the grill grates.
- Place the chicken on the medium heat side, cover, and grill for about 5 minutes.
- Flip the drumsticks, rearranging them for even cooking. Grill for another 5 minutes, adjusting for heat.
- When the chicken is nearly done, generously baste with the BBQ sauce mixture and cook for an additional 2 minutes with the lid closed. Flip, baste again, and cook for 2 more minutes or until the internal temperature reaches 165F.
- Allow the chicken to rest for 5-10 minutes before serving, garnishing as desired.
Notes
For best results, marinate the chicken overnight for deeper flavor.
Ensure the chicken is completely thawed if using frozen legs for even cooking.
A meat thermometer is essential to ensure the chicken is cooked through.
