Description

These Grilled BBQ Chicken Drumsticks offer irresistible flavors with a simple prep. Juicy chicken, a delightful BBQ sauce, and spices make this dish a must for any outdoor gathering!


Ingredients

  • 1 tablespoon light brown sugar, packed
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoon onion powder
  • 1 ½ teaspoon smoked paprika
  • 1 teaspoon freshly ground black pepper
  • chili powder or cayenne pepper, optional and to taste for spiciness
  • 4 pounds chicken legs
  • 1 cup BBQ sauce
  • ¼ cup apricot jam

Instructions

  1. In a small bowl, combine all seasonings and spices to create the dry rub.
  2. Pat the chicken dry with paper towels. Rub the dry rub evenly over the drumsticks. Cover and refrigerate for 1-2 hours, or overnight.
  3. In a saucepan, combine BBQ sauce and jam. Heat over medium-low until simmering, and let it thicken for about 10 minutes, whisking occasionally. Set aside.
  4. Preheat the grill with half on high and half on medium heat. Lightly oil the grill grates.
  5. Place the chicken on the medium heat side, cover, and grill for about 5 minutes.
  6. Flip the drumsticks, rearranging them for even cooking. Grill for another 5 minutes, adjusting for heat.
  7. When the chicken is nearly done, generously baste with the BBQ sauce mixture and cook for an additional 2 minutes with the lid closed. Flip, baste again, and cook for 2 more minutes or until the internal temperature reaches 165F.
  8. Allow the chicken to rest for 5-10 minutes before serving, garnishing as desired.

Notes

For best results, marinate the chicken overnight for deeper flavor.
Ensure the chicken is completely thawed if using frozen legs for even cooking.
A meat thermometer is essential to ensure the chicken is cooked through.
