Description

This Grilled Asparagus & Zucchini Salad is bursting with flavors from fresh veggies, a tangy dressing, and a delicious mix of herbs, making it a fantastic choice for a quick and healthy meal.


Ingredients

  • 1 lb asparagus, ends trimmed
  • 2 medium zucchini, ends trimmed, cut in half lengthwise and cut into spears
  • 1 tbsp olive oil, for tossing
  • kosher salt and black pepper, to taste
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 small shallot, minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 4 cups chopped butter lettuce
  • 3 green onions, sliced
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped pistachios
  • 1/4 cup chopped dill
  • 1/4 cup chopped basil
  • lemon zest, for garnish

Instructions

  1. In a large bowl, combine asparagus and zucchini. Drizzle with olive oil and season with salt and pepper before tossing to coat.
  2. Preheat the grill or grill pan to medium-high heat. Grill the vegetables, placing zucchini cut side down. Grill asparagus for 6 to 8 minutes until charred and bright green, flipping once. Grill zucchini for 3 to 4 minutes per side until tender and marked.
  3. Transfer the grilled vegetables to a board and let cool, then cut them into 1-inch pieces.
  4. For the dressing, whisk together olive oil, lemon juice, shallot, Dijon mustard, honey, garlic, salt, and pepper in a small bowl.
  5. In a large serving bowl, mix lettuce, grilled asparagus, zucchini, green onion, feta, pistachios, dill, and basil. Drizzle with dressing and toss. Garnish with lemon zest before serving.

Notes

For extra flavor, consider marinating the vegetables in the dressing for a short period before grilling.
Feel free to substitute feta with another cheese if desired, such as goat cheese or Parmesan.
This salad can be served warm or cold and is great for meal-prepping.
