Description

These Graduation Cap & Diploma Sugar Cookies blend delightful flavors with fun shapes, making them an ideal treat for graduation parties. With simple prep and key ingredients like white chocolate and butter, they are a joy to create and taste!


Ingredients

Scale
  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix flour, salt, and baking powder in a bowl and set aside.
  3. Cream the butter and sugar until light and fluffy.
  4. Stir in the egg, vanilla, and almond extract.
  5. Gradually add dry ingredients and mix until just combined.
  6. If the dough is sticky, add a bit of flour.
  7. Roll out the dough on a floured surface to about 1/8 inch thick.
  8. Cut out twelve 3-inch circles and diamond-shaped grad caps from the dough.
  9. Cut a triangle-shaped notch out of each circle for the grad cap.
  10. Press the diamond-shaped dough into the notch and seal the edges with your fingers.
  11. Bake for 10-14 minutes until edges are set and tops look dry.
  12. Allow cookies to cool completely before decorating.
  13. Reserve 2 tablespoons of white modeling chocolate for tassels, and color the rest for the caps.
  14. Roll out flesh-tone chocolate to about 1/16 inch and cut into 3-inch circles.
  15. Roll out the colored chocolate similarly and cut out 12 diamond-shaped grad caps.
  16. Use the notch cutter on each circle and brush with corn syrup before layering the chocolates.
  17. Roll modeling chocolate for tassels and form the strands as directed. Brush dot of corn syrup to attach strands to the caps and shapes as needed.

Notes

Ensure the modeling chocolate rests before using for best consistency.
For a unique touch, mix various food coloring shades.
Store cookies in an airtight container to maintain freshness.
