  • 8 lamb chops (rib or loin chops, about 1-inch thick)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons finely chopped fresh rosemary
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 4 tablespoons unsalted butter, very soft (not melted)
  • 1 1/2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • lemon wedges and flaky sea salt, for serving

Instructions

  1. Combine the olive oil, minced garlic, chopped rosemary, sea salt, and black pepper in a shallow dish or zip-top bag. Add the lamb chops, coating them thoroughly. Let the mixture marinate at room temperature for 20–30 minutes, or refrigerate for up to 8 hours (bring to room temperature before cooking).
  2. In a small bowl, mash the softened butter with the fresh lemon juice and lemon zest until well combined. Set aside.
  3. Preheat the outdoor grill to medium-high heat (400–450°F) and oil the grates well. For a grill pan, heat it over medium-high heat until very hot, lightly oil if needed.
  4. Place the marinated lamb chops on the grill or grill pan in a single layer, cooking in batches if necessary. Grill for 3–4 minutes on each side, until they are nicely charred and reach your desired doneness (about 130–135°F for medium-rare).
  5. Once cooked, transfer the lamb chops to a serving platter and allow them to rest for 5 minutes. Top each chop with a portion of the prepared lemon butter, allowing it to melt over the warm meat.
  6. Finish with flaky sea salt and serve immediately, accompanied by lemon wedges.
