- 3 tablespoons butter
- 2 large onions
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup swiss cheese
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and cook for 20-25 minutes until golden and caramelized. Set aside half for the sauce.
- In a bowl, mix the ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and the remaining onions until just combined.
- Shape the mixture into a loaf and place it in a baking dish. Bake for 45 minutes.
- In the skillet, add the reserved onions and remaining butter. Melt, then whisk in the flour, cooking for 1 minute. Gradually add the beef broth and simmer until thickened.
- Remove the meatloaf from the oven. Top with Swiss cheese and provolone, then broil for 3-5 minutes until the cheese is melted and golden.
- Let the meatloaf rest for 5-10 minutes before slicing. Serve with the onion sauce.
Notes
If you prefer a spicier flavor, add some crushed red pepper flakes to the meat mixture.
