Description

This French Lemon Tart features a crisp, buttery crust and a luscious lemon filling, making it a perfect dessert for gatherings. With simple ingredients and a straightforward method, you’ll love how easy it is to create this flavorful treat at home.

Ingredients

Scale
  • 2 cups (240 grams) all purpose flour
  • ¾ cup (90 grams) confectioners' sugar
  • pinch of salt
  • 10 tablespoons (142 grams) unsalted butter, very cold and cubed
  • 1 large egg, beaten
  • 1 tablespoon lemon zest
  • ½ cup (120 grams) lemon juice (from about 3–4 lemons)
  • 1 cup (200 grams) white sugar
  • 3 large eggs
  • 3 large egg yolks
  • ½ cup (114 grams) unsalted butter, cold and cubed
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla

Instructions

  1. Pulse together all purpose flour, confectioners' sugar, and a pinch of salt in a food processor until combined.
  2. Add the cold cubed butter and pulse until the butter is broken down into pebble-sized pieces.
  3. Add the beaten egg and pulse until the mixture resembles crumbly sand.
  4. Gather the dough with your hands to form a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. After chilling, roll the dough out into a 12-inch circle on a floured surface to about ⅛ to ¼-inch thickness.
  6. Transfer the rolled dough into a 9-inch tart pan, press into the sides, and trim the excess.
  7. Place the tart shell in the freezer for 20-30 minutes to firm up.
  8. Preheat the oven to 350°F and prick the crust with a fork; cover with parchment and pie weights.
  9. Bake for 20 minutes, remove weights and parchment, and bake for an additional 10 minutes until lightly golden. Allow to cool completely before filling.

Notes

Make sure your butter is very cold for a flaky crust.
Use fresh lemons for the best flavor in your tart.
Chilling the dough is crucial for easy handling and prevents shrinkage during baking.
