Description

Ingredients

  • 2 tablespoons olive oil
  • ½ yellow onion, minced
  • ½ teaspoon salt
  • 3 cloves garlic, minced
  • 28 oz tomato sauce
  • 1 cup vegetable broth
  • Pinch of sugar
  • ¼ teaspoon black pepper
  • 24 oz vegan ground beef
  • 1 cup parboiled white rice
  • ¼ cup grated carrot
  • ¼ cup raisins (optional)
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 medium green cabbage
  • Fresh dill, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced onion and salt and sauté until translucent, about 2-3 minutes.
  3. Add the garlic and sauté for another 2 minutes or until fragrant.
  4. Add the tomato sauce, vegetable broth, sugar, and black pepper. Stir together and bring to a simmer.
  5. Simmer for 10 minutes, stirring occasionally. Adjust salt and black pepper to taste, then set aside.

Notes

You can substitute white rice with quinoa for a healthier option.
Feel free to add other vegetables to the filling for extra nutrition.
The cabbage leaves can be softened by steaming them briefly before filling.
