Description

This Easy Cucumber Tomato Dill Salad is vibrant and refreshing, featuring crisp cucumbers and juicy tomatoes paired with fragrant dill. Perfect for a quick, healthy side dish or a light meal, this salad is easy to prepare and bursting with flavor, making it an ideal option for any occasion.

Ingredients

Scale
  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion, peeled and thinly sliced
  • 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber in half lengthwise and remove the seeds with a spoon before discarding them.
  2. Cut the cucumber into thick half-moons and place them in a large bowl. Sprinkle with 1/2 teaspoon of kosher salt and let it sit for about 5 minutes to allow moisture to escape. Discard any cucumber water after.
  3. Cut the tomatoes into thick wedges and add them to the bowl, along with the sliced red onion.
  4. Drizzle the salad with vinegar, olive oil, honey, the remaining kosher salt, and black pepper. Toss to combine.
  5. Add the chopped dill and toss again to mix all ingredients.
  6. Serve chilled or at room temperature.

Notes

For a flavor boost, try adding feta cheese or avocado.
Feel free to substitute the vinegar for your favorite type if you prefer.
This salad can be made ahead of time and stored in the refrigerator for a quick lunch or dinner side.
